Ingredients
- • green lentils: 1 cup, rinsed
- • sweet potatoes: 2 medium, peeled and diced
- • cauliflower: 1 large head, chopped into florets

- • carrot: 2 medium, diced
- • celery stalks: 2, diced
- • vegetable broth: 3 cups
- • tomato paste: 2 tablespoons
- • Worcestershire sauce: 1 tablespoon
- • thyme: 1 teaspoon, dried
- • rosemary: 1 teaspoon, dried
- • salt: to taste
- • black pepper: to taste
- • nutritional yeast: 2 tablespoons
- • almond milk: 1/4 cup (unsweetened)
- • fresh parsley: for garnish

Instructions
- 1 Preheat your oven to 375°F (190°C).
- 2 In a large pot, bring water to a boil and add the sweet potatoes. Cook until tender, about 15 minutes. Drain and set aside.
- 3 In another pot, add cauliflower florets and cover with water. Boil until tender, about 10 minutes. Drain and transfer to a food processor with almond milk, nutritional yeast, salt, and pepper. Blend until smooth and creamy.
- 4 Meanwhile, in a large skillet, heat olive oil over medium heat. Sauté the onion and garlic until fragrant and translucent, about 3 minutes.
- 5 Add carrots and celery to the skillet and cook for another 5 minutes until softened. Stir in the lentils, vegetable broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- 6 Bring the mixture to a simmer and cook for 20 minutes, or until the lentils are tender and the liquid is mostly absorbed.
- 7 In a large ovenproof dish, spread the lentil and vegetable mixture evenly. Layer the cooked sweet potatoes on top, followed by the cauliflower mash.

- 9 Remove from the oven, let cool slightly, and garnish with fresh parsley before serving.
