  • sirloin steak: 1 lb, cut into 1-inch cubes
  • thick-cut bacon: 8 slices
  • sharp cheddar cheese: 1 cup, shredded
  • sour cream: 1/2 cup
  • mayonnaise: 1/2 cup
  • Dijon mustard: 1 tbsp
  • chives: 1/4 cup, chopped
  • garlic powder: 1 tsp
  • mixed greens: 4 cups
  • cherry tomatoes: 1 cup, halved
  • red onion: 1/4 cup, thinly sliced

Instructions

  1. 1 Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2 Toss the quartered red potatoes with olive oil, salt, and black pepper. Spread them evenly on the prepared baking sheet and roast for 25-30 minutes until golden and crispy. Set aside to cool slightly.
  3. 3 While the potatoes are roasting, wrap each steak cube with a half-slice of bacon, securing it with a toothpick. Heat a skillet over medium-high heat and sear the bacon-wrapped steak bites until the bacon is crispy and the steak is cooked to your desired doneness, about 8-10 minutes.
