Ingredients
- • dry green lentils: 1 cup
- • water: 3 cups
- • ripe peaches: 2, halved and pitted
- • canned chickpeas, drained and rinsed: 1 can (15 oz)
- • za'atar spice blend: 2 tablespoons
- • cherry tomatoes, halved: 1 cup
- • cucumber, diced: 1 cup
- • arugula: 4 cups
- • fresh mint leaves, chopped: 1/4 cup
- • fresh parsley, chopped: 1/4 cup
- • olive oil: 3 tablespoons
- • lemon juice: 2 tablespoons
- • tahini: 2 tablespoons
- • garlic, minced: 1 clove
- • salt and pepper: to taste
 
  Instructions
- 1 Rinse the lentils under cold water. In a pot, bring 3 cups of water to a boil. Add the lentils, reduce the heat, and simmer for 15-20 minutes or until tender. Drain and set aside to cool.
- 2 While the lentils cook, preheat a grill pan over medium-high heat. Brush the peach halves with 1 tablespoon of olive oil and grill for 3-4 minutes on each side until they have grill marks and are slightly softened. Remove from the pan and let cool before slicing each half into wedges.
