Ingredients
- • farro: 1 cup
- • water: 3 cups
- • salt: 1/2 teaspoon
- • fresh parsley, chopped: 1/2 cup
- • fresh mint leaves, chopped: 1/4 cup
- • fresh cilantro, chopped: 1/4 cup
- • orange, peeled and segmented: 1
- • grapefruit, peeled and segmented: 1
- • pomegranate seeds: 1/2 cup
- • radishes, thinly sliced: 4
- • red onion, thinly sliced: 1/4 cup
- • extra-virgin olive oil: 2 tablespoons
- • tahini: 2 tablespoons
- • lemon juice: 2 tablespoons
- • honey: 1 teaspoon
- • ground cumin: 1/2 teaspoon
- • black pepper: 1/4 teaspoon

  Instructions
- 1 Rinse the farro under cold water. In a medium saucepan, combine the farro, water, and salt. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer until the farro is tender, about 25 minutes. Drain any excess water and let it cool.
- 2 In a large mixing bowl, combine the cooled farro with the chopped parsley, mint, and cilantro. Toss gently to mix the herbs evenly throughout the grains.
- 3 Add the orange and grapefruit segments, pomegranate seeds, sliced radishes, and red onion to the bowl. Toss everything together carefully to avoid breaking the fruit segments.
- 4 For the dressing, whisk together the olive oil, tahini, lemon juice, honey, cumin, and black pepper in a small bowl until smooth and creamy.
- 5 Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly. Adjust seasoning with more salt or pepper to taste if needed.
- 6 Serve the salad immediately, or chill it in the refrigerator for 15 minutes to enhance the flavors.
Serving Suggestions
- • This Middle Eastern Herb & Citrus Farro Salad is delicious on its own, but you can pair it with a side of grilled chicken or fish for added protein. For a vegetarian meal, try serving it alongside a warm bowl of lentil soup. Enhance the salad's vibrant appearance by garnishing with additional pomegranate seeds and a sprinkle of sesame seeds. For a refreshing beverage, try pairing this salad with a chilled mint tea or a glass of sparkling water infused with citrus slices.
Storage Tips
Store any leftovers in an airtight container in the refrigerator for up to 2 days. To maintain freshness, keep the dressing separate and add just before serving. If the salad becomes too dry after refrigeration, refresh it with a bit of extra lemon juice or olive oil before serving.
