Deliciously crispy air-fried eggplant and lentil kofta served with a spiced yogurt drizzle. A healthy, flavorful Middle Eastern-inspired dish!
Ingredients
- • eggplant: 1 medium, peeled and cubed
- • cooked lentils: 1 cup
- • onion: 1 small, finely chopped
- • garlic cloves: 3, minced
- • ground cumin: 1 teaspoon
- • ground coriander: 1 teaspoon
- • fresh parsley: 1/4 cup, chopped
- • fresh mint: 1/4 cup, chopped
- • chickpea flour: 2 tablespoons
- • baking powder: 1/2 teaspoon
- • olive oil: 1 tablespoon
- • plain Greek yogurt: 1 cup
- • paprika: 1/2 teaspoon
- • lemon juice: 1 tablespoon
- • salt and pepper: to taste

Instructions
- 1 Preheat your air fryer to 375°F (190°C).
- 2 Place the cubed eggplant in a microwave-safe bowl with a splash of water and cover. Microwave on high for 5 minutes until soft, then drain excess water.
- 3 In a food processor, combine the cooked lentils, softened eggplant, chopped onion, minced garlic, ground cumin, ground coriander, parsley, mint, chickpea flour, and baking powder. Pulse until well combined but still slightly chunky.
- 4 Form the mixture into small, oval-shaped koftas using your hands. Brush each kofta lightly with olive oil.
- 5 Arrange the koftas in a single layer in the air fryer basket. Air fry for 12-15 minutes, turning halfway through, until golden brown and crispy.
- 6 While the koftas are cooking, prepare the spiced yogurt drizzle. In a small bowl, mix the Greek yogurt with paprika, lemon juice, salt, and pepper until smooth.
- 7 Serve the koftas warm, drizzled with the spiced yogurt sauce and a sprinkle of additional fresh herbs if desired.
Serving Suggestions
- • These Air-Fried Eggplant & Lentil Koftas pair beautifully with a simple cucumber and tomato salad, providing a refreshing contrast to their savory flavors. For a heartier meal, serve alongside warm whole-grain pita or flatbread. As a beverage, a chilled glass of mint-infused lemonade complements the dish's Middle Eastern flair, adding a zesty and aromatic touch. Alternatively, opt for a light herbal tea to cleanse the palate and enhance the dining experience.
Storage Tips
Store any leftover koftas in an airtight container in the refrigerator for up to 3 days. When reheating, place them back in the air fryer at 350°F (175°C) for about 5 minutes to restore their crispiness. Avoid microwaving, as it can make them soggy. The spiced yogurt drizzle can be stored separately in the fridge for up to 5 days.
