Instructions
- 1 Preheat your air fryer to 375°F (190°C).
- 2 In a large bowl, combine olive oil, harissa paste, lemon juice, minced garlic, smoked paprika, ground cumin, salt, and black pepper. Mix well to create the marinade.

Serving Suggestions
- • These Harissa-Spiced Jackfruit & Mushroom Skewers pair beautifully with a side of quinoa salad, tossed with cherry tomatoes, cucumber, and a lemon-tahini dressing. For a refreshing beverage, consider serving with a chilled mint and lime-infused sparkling water. For a heartier meal, accompany the skewers with a warm whole wheat pita and a dollop of hummus or tzatziki. The creamy textures complement the spicy skewers, creating a balanced and satisfying meal.
Storage Tips
Leftover skewers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place them back in the air fryer at 350°F (175°C) for about 3-4 minutes to regain their crisp texture. Avoid freezing as the texture of jackfruit and mushrooms may change upon thawing.
