Warm up with a unique Hearty Mushroom & Lemongrass Miso Stew, rich in umami and packed with fresh veggies. Perfect for cozy, healthy evenings!
Ingredients
- • vegetable broth: 4 cups
- • assorted mushrooms (shiitake, cremini, oyster): 3 cups, sliced
- • lemongrass stalks: 2, trimmed and bruised
- • miso paste: 3 tablespoons
- • firm tofu: 1 block (14 oz), cubed
- • carrot: 1 large, sliced
- • baby bok choy: 2, chopped
- • garlic: 3 cloves, minced
- • ginger: 1 inch, minced
- • soy sauce: 2 tablespoons
- • lime juice: 1 tablespoon
- • green onions: 2, chopped for garnish
- • fresh cilantro: 1/4 cup, chopped for garnish
- • sesame oil: 1 teaspoon

  Instructions
- 1 Start by bringing the vegetable broth to a simmer in a large pot over medium heat. Add the bruised lemongrass stalks and allow them to infuse the broth for about 10 minutes, releasing their aromatic oils.
- 2 While the broth is simmering, heat the sesame oil in a skillet over medium-high heat. Sauté the assorted mushrooms until they are golden brown and fragrant, about 5-7 minutes. This step enhances the umami flavor of the mushrooms.
- 3 Remove the lemongrass stalks from the pot and discard. Add the sautéed mushrooms, garlic, ginger, carrots, and tofu to the pot. Stir gently and allow the stew to simmer for another 10 minutes.
- 4 In a small bowl, whisk the miso paste with a ladle of hot broth until smooth. Pour this mixture back into the stew, stirring well to combine without boiling, as high heat can destroy the beneficial probiotics in miso.
- 5 Add the chopped bok choy and soy sauce, and simmer for another 5 minutes until the bok choy is tender but still vibrant.
- 6 Finish with a squeeze of lime juice, adjust the seasoning with soy sauce if needed, and remove from heat. Garnish with green onions and cilantro before serving.
Serving Suggestions
- • Serve this Hearty Mushroom & Lemongrass Miso Stew with a side of steamed jasmine or brown rice for a complete meal. The mild, nutty flavor of the rice complements the rich, savory stew perfectly. For an extra crunch, you can sprinkle some toasted sesame seeds on top. To enhance the cozy vibes, pair this dish with a hot cup of green tea or a light ginger tisane.
Storage Tips
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove to preserve the delicate flavors of the lemongrass and miso. For longer storage, freeze the stew in portioned containers for up to 2 months. Thaw overnight in the refrigerator and reheat as needed.
